Strawberry and Rhubarb Lemonade

Strawberry Rhubarb LemonadeIf you’ve got strawberries and rhubarb, this is a must recipe. If you’re not growing them, it’s worth buying some just to make it. Doesn’t it look fantastic? It tastes every bit as good too.


  • 200g caster sugar
  • 200ml water
  • 3-4 lemons
  • 350g strawberries, halved
  • 250g rhubarb, cut into short pieces
  • soda water or sparkling water

Simmer the sugar, water and zest of 2 lemons until the sugar has melted. Add the fruit and simmer for about 15 minutes (the smell is heavenly). Either strain the mixture through muslin (this will take a long time) or puree with a stick blender. At this stage you have a wonderful fruity syrup.

To make into lemonade, add the juice of 3 to 4 lemons depending on how lemony you want it. Fill a tall glass one third full with syrup and top up with soda water or sparkling water. Give it a good stir, sit in the sun, and enjoy.
