Strawberry and Rhubarb Ice-Cream

Strawberry and Rhubarb Ice-creamStrawberries and rhubarb work extremely well together. This makes a lovely ice-cream full of the flavours of summer.


  • 100g caster sugar
  • 100ml water
  • zest of 1 lemon
  • about 175g strawberries
  • about 125g rhubarb
  • 300ml double cream

Heat the sugar, water and zest until the sugar has dissolved and the syrup is simmering. Add the fruit and simmer gently for about 15 minutes. Purée the fruits and syrup together. If you don’t want any strawberry seeds then pass the mixture through a sieve. I tried but gave up as the mixture is very thick and I don’t mind the seeds. Cool the fruit syrup then stir in the double cream and pour into an ice-cream machine.
